Seven uses for leftover rice at Christmas

Everyone who cooks is likely to face this dilemma at one time or another: A bowl or pot of rice sitting in a refrigerator without any food to accompany it. If you have never experienced this, lucky you.

If you are likely to experience this as most mortals have done, especially during a festival like Christmas where rice and soup are very plenty, this write-up should be one of your companions. I can almost bet that you will need it!
Here are seven ideas for making use of your rice leftover:

1. Make a simple rice salad. artichoke hearts, roasted or raw red pepper, olives, almonds and cashews all go along well. Two table spoons of extra virgin olive oil, a teaspoon of wine vinegar, and a teaspoon of Dijon mustard make a quick dressing that will make your rice seem like anything but a leftover.
2. Add your rice to some soup, either canned or fresh.

A bean soup works especially well with leftover rice!
3. Make a quick rice pudding. Add a cup of organic low fat vanilla yogurt, a cup of applesauce, and a teaspoon of cinnamon to each cup of rice. Stir well and you are done!
4. Steam a few of your favourite vegetables like - carrot, broccoli, cabbage, green peppers - and enjoy them over a bed of warmed rice.

5. Incorporate the rice into our pineapple, coconut rice breakfast - only five more ingredients are needed: pineapple chunks, almonds, raisins, banana, and coconut milk.
