Varieties this Christmas

Most of us are familiar with fruit and vegetable salads, what of fish salad? Try out fish salad with your family this weekend as part of your preparation for Christmas celebration.

Then on the D-Day, serve it in place of the regulars, fruit and vegetable salads.
This salad even qualifies as a balanced diet.
The fish, mackerel, egg and brown beans are very good sources of protein. Mackerel is one of the few fishes with omega fatty acids, very good for the heart as against the saturated fats in other animal proteins.

Brown beans are a good source of plant protein. In addition to this, its fibre content could bind with blood sugar, fat and cholesterol and reduce them in the body.
Onion, garlic, lettuce are loaded with phytonutrients essential for sound health. There are tomatoes, full of vitamin C.

Fish salad
Ingredients
I kg of mackerel
1 medium size of onion (sliced)
1 clove of garlic
2 medium size of fresh tomatoes
1 medium bunch of lettuce
1 cup of brown beans (cooked)
1 egg (boiled)
1 seasoning cube
1 cup of water
Salt to taste

Method
Clean the fish, and cut into five pieces. Season with seasoning cube, garlic and salt. Add water and cook for about 15 minutes with the pot covered. Allow to cool and flake the fish. Wash and chop the lettuce.
Slice the boiled egg. Cut the tomato in rings. In a mixing bowl, add all the ingredients together. Toss and serve.
